Stovetop Broccoli, Cheese, and Rice Casserole

Time to clean out your overcrowded ass refrigerator and use those scant bits of cheese and to make some broccoli, cheese, and rice casserole…on the STOVETOP!

Gather your will to live and these other items:

INGREDIENTS:

  • 1 cup leftover, cooked rice 
  • 3-4 ounces of cheese that melts well (I used a shredded Mexican blend and 2 slices of havarti)
  • ½ head of broccoli florets and stems
  • 3 tablespoons butter
  • 2 ½ – 3 tablespoons flour
  • Approximately 1 cup of milk (*must be COLD*)
  • Approximately ½ cup water
  • ½ small onion, diced
  • 3-4 cloves of garlic, finely chopped
  • ¼ teaspoon powdered turmeric
  • Salt and pepper, to taste

TO MAKE THIS A WHOLE ASS MEAL:

Serve with:

  • Cooked protein of your choice
  • 6-7 strawberries, cut into fourths
  • ¼ cup any kind of yogurt
  • ½ tablespoon honey
  • 3 tablespoons walnuts

DIRECTIONS FOR THE CASSEROLE:

  • Steam your broccoli to your desired doneness. Follow the rest of the steps below while you steam the broccoli.
  • Melt the butter in a large pan.
  • Add the chopped onions and sprinkle with a pinch of salt; cook until translucent.
  • Sprinkle the flour into the butter mixture and stir to coat / cook all the flour.
  • Whisk in the cold milk vigorously! The mixture will come together; add water to thin it out to your desired thicccccness.
  • Cook the cheese base mixture for about 1-2 minutes.
  • Stir in your cheese(s) until melted.
  • Taste! Add salt and pepper to taste.
  • Add the turmeric powder for additional color, if needed/desired.
  • Stir in your cooked broccoli and rice. Taste again, adjust seasoning.
