On Saturday, August 15, 2026, I went on a hike in beautiful Larkspur, CO. This group of horseback riders was one of the first things I encountered. Stunning horses and backdrop.

My friend took me on this hike and started on the Juniper Valley Loop and then made a bit of a detour on the Red Rock Vista trail.

Notice my woefully white and brand new tennis shoes? I am not an experienced hiker, lol.

This area was a beautiful and expansive place for a hike.

The Juniper Valley was a lovely place to hike and is great for beginners / people with a fat body / people with squeaky knees / people who have things in common with me, lol.

We made sure to stay on the paved paths and not disobey the signage.

A guy huffing and puffing up the trail near us stopped and offered to take our picture. It was REALLY hot this day, so I don’t blame the guy for wanting a little break from the biking. Thanks for the memorable photo, random stranger.

Click through to see the food we ate after the hike. Immediately after the hike, we stopped aft Freddy’s for smashburgers and fries.

Later, we we hungry after walking around the Castle Rock O utlet Mall and ended up at Savina’s Mexican Kitchen. Now, coming from Houston, the food at Savina’s was a grade B-, but for the area, I could perhaps grade it an A-. A little under seasoned, but I think that’s just how the food is prepared in this part of the world.

I am trying not to compare food in CO to food in TX because there is no comparison, honestly. The service was great, though and I’d definitely go back again. The view from the bar at Savina’s was STUNNING.

Oh, how nice it must be to go horseback riding in Juniper Valley!

By the end of the day, I was more worn out than a 50 year old pair of cowboy boots! My left foot hurt so bad that I was hobbling by the end of the day. I came home, soaked in the tub, and popped 3 Advil. It was a marveolus day indeed.
